Ingredients

  • 2 cup BLACKEYED PEAS, organic
  • 2 cup CORN, FROZEN,
  • 1 cup GREEN BELL PEPPER, SWEET, CHOPPED
  • 1 cup RED BELL PEPPER, CHOPPED
  • 1/2 cup CILANTRO, FRESH, MINCED
  • 1/2 cup GREEN ONIONS
  • 1 clove GARLIC, RAW
  • 2 cup ITALIAN SALAD DRESSING, REDUCED FAT, LOW SODIUM
  • 1 tsp PEPPER, BLACK, GROUND

Instructions

  1. Chop all vegetables and garlic.
  2. Mix all ingredients together and season with black pepper and a dash or sea salt.
  3. Chill at least 2-3 hours or overnight.
  4. Serve alone as a salad or with chips.
