Sweet Potato Breakfast Bowl June 15, 2016 By Jump to recipe Sweet Potato Breakfast Bowl (V) June 15, 2016 by EIR Category Recipes Vegan Sweet Potato Breakfast Bowl Persons 4 Ingredients 1/2 lbs sweet potatoes, peeled, cubed 1/4 cup almond milk, vanilla 1 - 1/4 tsp cinnamon 1/4 cup +1 tbsp walnuts 1/4 cup wild blueberries, organic Instructions Boil 1-inch cubed sweet potatoes for 8 minutes or until tender and drain. Add almond milk and cinnamon then mash into a smooth porridge. Mix in 1/4 cup walnuts. Spoon 1-1/2 cup per serving into breakfast bowl and top with blueberries, walnuts and bit of almond milk float.
