Sweet Potato Breakfast Bowl (V)

Ingredients

  • 1/2 lbs sweet potatoes, peeled, cubed
  • 1/4 cup almond milk, vanilla
  • 1 - 1/4 tsp cinnamon
  • 1/4 cup +1 tbsp walnuts
  • 1/4 cup wild blueberries, organic

Instructions

  1. Boil 1-inch cubed sweet potatoes for 8 minutes or until tender and drain.
  2. Add almond milk and cinnamon then mash into a smooth porridge.
  3. Mix in 1/4 cup walnuts.
  4. Spoon 1-1/2 cup per serving into breakfast bowl and top with blueberries, walnuts and bit of almond milk float.
