Sweet Potato Breakfast Bowl (V)
Vegan Sweet Potato Breakfast Bowl
- 1/2 lbs sweet potatoes, peeled, cubed
- 1/4 cup almond milk, vanilla
- 1 - 1/4 tsp cinnamon
- 1/4 cup +1 tbsp walnuts
- 1/4 cup wild blueberries, organic
- Boil 1-inch cubed sweet potatoes for 8 minutes or until tender and drain.
- Add almond milk and cinnamon then mash into a smooth porridge.
- Mix in 1/4 cup walnuts.
- Spoon 1-1/2 cup per serving into breakfast bowl and top with blueberries, walnuts and bit of almond milk float.
