Orange & Olive Oil Muffins (GF)

Ingredients

• 1 cup all purpose flour, gluten free
• 1/4 cup extra virgin olive oil, 100% first cold pressed, unrefined
• 1/4 cup honey, 100% raw
• 1/2 tsp vanilla, alcohol free
• 1 1/2 tsp baking powder
• 1/8 tsp xanthum gum (gluten free)
• 1/4 tsp salt
• 1 tbsp orange juice, fresh squeezed
• 1 cup orange fiber (from juicing)

Instructions

1. Preheat oven to 350 °F.
2. Sift all dry ingredients.
3. Add honey, olive oil, vanilla, and orange juice and mix well.
4. Fold in orange fiber and mix until well incorporated.
5. Spoon into muffin tins lined with muffin liners. About 1 1/2 tablespoons per tin.
6. Sift all dry ingredients.

10. Bake in 350° oven for 20 minutes or until toothpick inserted in center comes out clean.
11. Serve with Plum Sauce
