Gluten Free Orange & Olive Oil Muffins

Ingredients
- 1 cup all purpose flour, gluten free
- 1/4 cup extra virgin olive oil, 100% first cold pressed, unrefined
- 1/4 cup honey, 100% raw
- 1/2 tsp vanilla, alcohol free
- 1 1/2 tsp baking powder
- 1/8 tsp xanthum gum (gluten free)
- 1/4 tsp salt
- 1 tbsp orange juice, fresh squeezed
- 1 cup orange fiber (from juicing)
Instructions
- Preheat oven to 350 °F.
- Sift all dry ingredients.
- Add honey, olive oil, vanilla, and orange juice and mix well.
- Fold in orange fiber and mix until well incorporated.
- Spoon into muffin tins lined with muffin liners. About 1 1/2 tablespoons per tin.

- Bake in 350° oven for 20 minutes or until toothpick inserted in center comes out clean.
