Lemon Feta Stuffed Salmon

Lemon Feta Stuffed Salmon

Ingredients

  • 1 oz salmon, atlantic, wild, raw
  • 1 tsp lemon peel, raw
  • 1/2 tbsp lemon juice
  • 1/4 tsp salt, sea
  • 1 tsp parsley, raw
  • 1/4 cup feta cheese, crumbled
  • 1/2 tbsp butter, no added salt
  • 1 tbsp olive oil, extra virgin (100% first cold pressed, unrefined)

Instructions

  1. Grate lemon peel and mince parsley.
  2. Mix grated lemon peel, parsley and 1/2 tbsp olive oil, and lemon juice with feta cheese and mix with hands until cheese is soft enough to spread.
  3. Melt butter and add 1/2 tbsp olive oil.
  4. Coat both sides of salmon with butter olive oil mixture and salt.
  5. Spread one side with the lemon feta mixture and roll salmon.
  6. Secure with toothpicks.
  7. Place in a broiling pan or on a sheet of foil.
  8. Broil until salmon easily flakes with a fork. (about 15 minutes)

    I love salmon, but preparing it seems to be a delicate science. Is this a misconception? What’s the secret to achieving a moist salmon dish? This looks amazing by the way!

      The secret to a good piece of fish is starting with fresh fish and not overcooking. Depending on size of fish, about 10-15 minutes is sufficient for broiling/baking at about 350 degrees fahrenheit. 3-4 minutes each side when pan searing on medium high heat. Thanks!

      BONUS TIP: Fish should be opaque and flake easily, but not be dry. 😉
