Brown Rice With Glazed Mint Apricots

1 cup, per serving
Ingredients
- 3 cup brown rice, long grain
- 1/2 lb apricot, raw, halves
- 1 ½ tbsp honey, raw, organic
- 1 tbsp olive oil, extra virgin, 100% first cold pressed, unrefined
- 1 tbsp peppermint leaf, fresh
- 1 tbsp parsley, raw
- 1/8 tsp salt, sea
Instructions
- Prepare brown rice according to package directions for 6 cups cooked.
- Cut apricots into 1 inch cubes. In a medium sauce pan add olive oil and apricots.
- Heat on medium heat until apricots begin to release juices, about 2-3 minutes.
- Add honey, salt, mint and parsley.
- Cook for another 1 to 1/2 minutes .
- Mix well, being sure apricots are well coated with honey and juices.
- Serve warm apricots over brown rice.
- Approx 1/2 cup apricots over 1 cup brown rice.
