Brown Rice With Glazed Mint Apricots

Brown Rice With Glazed Mint Apricots

Ingredients

  • 3 cup brown rice, long grain
  • 1/2 lb apricot, raw, halves
  • 1 ½ tbsp honey, raw, organic
  • 1 tbsp olive oil, extra virgin, 100% first cold pressed, unrefined
  • 1 tbsp peppermint leaf, fresh
  • 1 tbsp parsley, raw
  • 1/8 tsp salt, sea

Instructions

  1. Prepare brown rice according to package directions for 6 cups cooked.
  2. Cut apricots into 1 inch cubes. In a medium sauce pan add olive oil and apricots.
  3. Heat on medium heat until apricots begin to release juices, about 2-3 minutes.
  4. Add honey, salt, mint and parsley.
  5. Cook for another 1 to 1/2 minutes .
  6. Mix well, being sure apricots are well coated with honey and juices.
  7. Serve warm apricots over brown rice.
  8. Approx 1/2 cup apricots over 1 cup brown rice.
