Brown Rice with Glazed Mint Apricots August 16, 2016 By Jump to recipe Brown Rice With Glazed Mint Apricots August 16, 2016 by EIR Category Recipes Brown Rice With Glazed Mint Apricots Persons 12 Serving Size 1 cup, per serving Ingredients 3 cup brown rice, long grain 1/2 lb apricot, raw, halves 1 ½ tbsp honey, raw, organic 1 tbsp olive oil, extra virgin, 100% first cold pressed, unrefined 1 tbsp peppermint leaf, fresh 1 tbsp parsley, raw 1/8 tsp salt, sea Instructions Prepare brown rice according to package directions for 6 cups cooked. Cut apricots into 1 inch cubes. In a medium sauce pan add olive oil and apricots. Heat on medium heat until apricots begin to release juices, about 2-3 minutes. Add honey, salt, mint and parsley. Cook for another 1 to 1/2 minutes . Mix well, being sure apricots are well coated with honey and juices. Serve warm apricots over brown rice. Approx 1/2 cup apricots over 1 cup brown rice.
