Ingredients
- 1 med apple
- 1 med flour tortilla, gluten free
- 2 tsp ground cinnamon
- 1 tbsp. extra virgin olive oil
- 1 tbsp. raw sugar
- 1 tbsp. walnut pieces
Instructions
- Steam tortilla and coat on both sides with 1/2 tbsp. olive oil.
- Sprinkle one side with 1 tsp of cinnamon and crushed walnuts.
- Mix remaining cinnamon with raw sugar.
- Wash and peel apple keeping stem intact.
- Coat apple with remaining olive oil and roll in cinnamon and raw sugar mixture until well coated.
- Place coated apple in center of the tortilla and fold edges up smoothing as you go, until you reach stem.
- Cut off any remaining tortilla at the top down to base of stem and press remainder around stem base to seal apple completely within tortilla.
- Place on well greased cookie sheet and bake in preheated 350° oven for 40 - 45 minutes. Remove when tortilla shell is golden brown.
- Plate with 1 tbsp. of raw maple syrup and almond pieces.
