- 3 ½ cups zucchini w/skin, raw, shredded
- ¼ cup parsley, raw
- 2 tbsp vinegar, organic apple cider
- 1 tbsp olive oil, extra virgin, 100% first cold pressed, unrefined
- 1 clove garlic, raw, minced
- 1 dash sea salt
- 1 dash pepper, black, ground
- 1 tbsp walnut, english, dried, raw, finely chopped
- Squeeze zucchini with fingers to remove excess water.
- Place zucchini and all other ingredients except nuts in a blender or food processor.
- Process until smooth, scraping sides as needed.
- Spoon the mixture into a serving container and fold in nuts.
- Cover and chill before serving.
