Zuchini Corn & Cilantro

Ingredients

  • 2 med ZUCCHINI W/SKIN, RAW
  • 1/2 cup CORN, SWEET, FROZEN, ORGANIC
  • 2 clove GARLIC, RAW
  • 2 tsp OLIVE OIL, EXTRA VIRGIN, 100% first cold pressed unrefined
  • 2 tbsp CILANTRO, RAW
  • 4 tsp LIME JUICE, RAW
  • 1 tsp BLACK PEPPER, GROUND

Instructions

  1. Cut zucchini into cubes. In a large skillet add olive oil and sauté garlic.
  2. Add zucchini and cook approximately 3-4 minutes.
  3. Add corn and cook another 2-3 minutes.
  4. Remove from heat and add cilantro, lime juice and black pepper. Mix and serve.
