Zuchini Corn & Cilantro
- 2 med ZUCCHINI W/SKIN, RAW
- 1/2 cup CORN, SWEET, FROZEN, ORGANIC
- 2 clove GARLIC, RAW
- 2 tsp OLIVE OIL, EXTRA VIRGIN, 100% first cold pressed unrefined
- 2 tbsp CILANTRO, RAW
- 4 tsp LIME JUICE, RAW
- 1 tsp BLACK PEPPER, GROUND
- Cut zucchini into cubes. In a large skillet add olive oil and sauté garlic.
- Add zucchini and cook approximately 3-4 minutes.
- Add corn and cook another 2-3 minutes.
- Remove from heat and add cilantro, lime juice and black pepper. Mix and serve.
