Ingredients
- 1/2 cup red onions, chopped
- 1/4 cup lime juice, fresh, organic
- 4 cups watermelon, diced, organic
- 5 oz feta cheese, reduced fat, crumbled
- 3 tbsp. basil, fresh, chopped
- 1 tbsp. extra virgin olive oil, 100% first cold pressed, unrefined
- 4 oz black olives, large pitted
- 1/4 tsp black ground pepper
Instructions
- Peel and chop onions and place in small bowl.
- Add lime juice and let steep.
- In a large bowl add diced watermelon, feta, chopped basil, EVO and sliced black olives.
- Pour onions and juice over salad.
- Add black pepper and gently toss with hands to mix.
