Ingredients
- 1 cup broccoli flower clusters, raw
- 3 oz trout, raw, wild caught
- ½ cup water, distilled
- 1 small onion, raw, small
- ½ tsp tarragon, dried, leaves
- ¼ tsp black pepper, ground
- 1 ½ tbsp mayonnaise, olive oil base, organic
- 2 tsp lemon juice, raw
- 2 clove garlic, raw
- ¼ tsp mustard powder
- ¼ tsp black pepper, ground
Instructions
- Steam broccoli until crisp/tender. Slice onion into rings.
- In a large skillet combine water, onion and tarragon and bring to a boil.
- Add trout that has been seasoned with black pepper.
- Cover and poach 2-5 minutes.
- Remove fish and onion with a slotted spoon to a serving platter, keep warm.
- In a bowl combine the mayonnaise, lemon juice, chopped garlic, mustard and pepper.
- Add 1-3 tablespoons of cooking liquid until a desired sauce consistency is achieved.
- Serve fish and broccoli with garlic sauce over the top. May also substitute perch.
