Spicy Chicken & Green Bean Fajitas (GF) August 23, 2016 By Jump to recipe Spicy Chicken & Green Fajitas (GF) August 23, 2016 by EIR Category Recipes Spicy Chicken & Green Fajitas (GF) Persons 4 Serving Size 2 fajitas per serving Ingredients 1 lbs. chicken breast, boneless, skinless 1 lbs. green beans, fresh, chopped 1/2 tbsp. red chili powder 2 tsp. smoked paprika 1 tsp turmeric 1 dash cayenne pepper (adjust to desired heat) 1 dash pepper 1 dash sea salt 1 tbsp. extra virgin olive oil, 100% FCP, unrefined 8 flour tortillas, gluten free 1 tbsp. tzatziki sauce per serving Instructions Mix spices. Wash chicken breast and pat dry, then liberally coat with half of spice mixture.spice mixture. In a large skillet, pan sear chicken in 1/2 tablespoon EVO on med high heat until cooked through and browned. About 8 minutes each side depending on size of each chicken breast. Remove chicken and let rest for 5 minutes before cutting into about 1/2 inch strips. While chicken rests, add remaining 1/2 tablespoon of olive oil to skillet. Coat chopped green beans with remaining spice mixture, Sauté until slightly caramelized, yet crisp on the inside. About 5 minutes. Return chicken to skillet and mix with green beans as the sauté for additional 2 minutes. Remove mixture from skillet and place in a warming bowl. Heat tortillas in same skillet and wrap in foil to keep warm. When ready to serve, divide chicken & green beans evenly between each tortilla and top with tzatziki sauce .
