Pumpkin Chocolate Chip Muffins

Ingredients

• 2 cup GLUTEN FREE ALL PURPOSE FLOUR
• 1/2 tsp XANTHAN GUM
• 1 1/4 cup SUGAR, RAW, ORGANIC
• 1 1/2 tsp BAKING POWDER
• 1 1/2 tsp CINNAMON, GROUND
• 1 tsp SALT, SEA
• 1/2 tsp BAKING SODA
• 1/2 tsp NUTMEG, GROUND
• 1 large EGG WHITE
• 15 oz PUMPKIN, CANNED, ORGANIC
• 4 oz APPLESAUCE, ORGANIC, NO ADDED SUGAR
• 1/4 cup AVOCADO OIL, 100%
• 6 oz SEMI-SWEET CHOCOLATE CHIPS

Instructions

1. Preheat oven to 400 degrees.
2. In a large bowl, combine the first 8 ingredients.
3. In another bowl combine egg white, pumpkin, applesauce and oil
4. Add dry ingredients and stir until just moistened.
5. Stir in chocolate chips.
6. Line muffin tins with paper liners and fill 2/3 full.
7. Bake 18-22 minutes or until a toothpick comes out clean.
