Pumpkin Chocolate Chip Muffins August 7, 2017 By Jump to recipe Pumpkin Chocolate Chip Muffins August 7, 2017 by EIR Category Recipes Persons 24 Ingredients 2 cup GLUTEN FREE ALL PURPOSE FLOUR 1/2 tsp XANTHAN GUM 1 1/4 cup SUGAR, RAW, ORGANIC 1 1/2 tsp BAKING POWDER 1 1/2 tsp CINNAMON, GROUND 1 tsp SALT, SEA 1/2 tsp BAKING SODA 1/2 tsp NUTMEG, GROUND 1 large EGG WHITE 15 oz PUMPKIN, CANNED, ORGANIC 4 oz APPLESAUCE, ORGANIC, NO ADDED SUGAR 1/4 cup AVOCADO OIL, 100% 6 oz SEMI-SWEET CHOCOLATE CHIPS Instructions Preheat oven to 400 degrees. In a large bowl, combine the first 8 ingredients. In another bowl combine egg white, pumpkin, applesauce and oil Add dry ingredients and stir until just moistened. Stir in chocolate chips. Line muffin tins with paper liners and fill 2/3 full. Bake 18-22 minutes or until a toothpick comes out clean.
