Ingredients
- 2 cup GLUTEN FREE ALL PURPOSE FLOUR
- 1/2 tsp XANTHAN GUM
- 1 1/4 cup SUGAR, RAW, ORGANIC
- 1 1/2 tsp BAKING POWDER
- 1 1/2 tsp CINNAMON, GROUND
- 1 tsp SALT, SEA
- 1/2 tsp BAKING SODA
- 1/2 tsp NUTMEG, GROUND
- 1 large EGG WHITE
- 15 oz PUMPKIN, CANNED, ORGANIC
- 4 oz APPLESAUCE, ORGANIC, NO ADDED SUGAR
- 1/4 cup AVOCADO OIL, 100%
- 6 oz SEMI-SWEET CHOCOLATE CHIPS
Instructions
- Preheat oven to 400 degrees.
- In a large bowl, combine the first 8 ingredients.
- In another bowl combine egg white, pumpkin, applesauce and oil
- Add dry ingredients and stir until just moistened.
- Stir in chocolate chips.
- Line muffin tins with paper liners and fill 2/3 full.
- Bake 18-22 minutes or until a toothpick comes out clean.
