Ingredients
- 2 1/4 cup GLUTEN FREE ALL PURPOSE FLOUR
- 1 tsp BAKING POWDER, kosher
- 1/2 tsp SALT, SEA
- 2 tsp PUMPKIN PIE SPICE
- 1 cup BROWN SUGAR, LIGHT
- 15 oz PUMPKIN, CANNED, 100% pure pumpkin, organic
- 2 large EGGS, RAW, organic
- 1 tsp VANILLA EXTRACT, 100% pure, no alcohol
- 4 oz APPLESAUCE, no added sugar, organic
- 1 tsp ORANGE PEEL, RAW
- 4 oz BAKING CHIPS, SEMI-SWEET CHOCOLATE, VEGAN
- 1/3 cup WALNUT, ENGLISH, DRIED, RAW, pieces or chips
Instructions
- Preheat oven to 375 degrees. Line baking sheets with parchment.
- Combine flour, baking powder, salt and spice.
- Mix sugar, pumpkin, egg, vanilla, applesauce, and orange peel.
- Add flour to pumpkin mixture and combine until moistened.
- Stir in chocolate chips and nuts.
- Drop by teaspoon onto baking sheets.
- Bake for 18 minutes, cool.
