Open Face Avocado & Egg Salad Sandwich (GF) June 8, 2016 By Jump to recipe Open Face Avocado Egg Salad Sandwich (GF) June 8, 2016 by EIR Category Recipes Persons 2 Ingredients 1 large egg, hard-boiled 1 med avocado, raw 1 tbsp. mayonnaise, organic, expeller pressed, olive oil 1/8 tsp sea salt 1/4 tsp black pepper, ground 4 slices whole grain bread, gluten free 1 tsp parsley, raw Instructions Dice hard boiled eggs and avocado into bite size pieces. Mix with mayonnaise and add salt and pepper. Toast 4 slices of GF whole grain bread Divide salad between 4 slices of bread. Chop parsley and garnish sandwiches.
