Open Face Avocado Egg Salad Sandwich (GF)

Ingredients

  • 1 large egg, hard-boiled
  • 1 med avocado, raw
  • 1 tbsp. mayonnaise, organic, expeller pressed, olive oil
  • 1/8 tsp sea salt
  • 1/4 tsp black pepper, ground
  • 4 slices whole grain bread, gluten free
  • 1 tsp parsley, raw

Instructions

  1. Dice hard boiled eggs and avocado into bite size pieces.
  2. Mix with mayonnaise and add salt and pepper.
  3. Toast 4 slices of GF whole grain bread
  4. Divide salad between 4 slices of bread.
  5. Chop parsley and garnish sandwiches.
  6. Serve with the watermelon/cucumber salad or your favorite salad.
