Open Face Avocado Egg Salad Sandwich (GF)
- 1 large egg, hard-boiled
- 1 med avocado, raw
- 1 tbsp. mayonnaise, organic, expeller pressed, olive oil
- 1/8 tsp sea salt
- 1/4 tsp black pepper, ground
- 4 slices whole grain bread, gluten free
- 1 tsp parsley, raw
- Dice hard boiled eggs and avocado into bite size pieces.
- Mix with mayonnaise and add salt and pepper.
- Toast 4 slices of GF whole grain bread
- Divide salad between 4 slices of bread.
- Chop parsley and garnish sandwiches.
- Serve with the watermelon/cucumber salad or your favorite salad.
