Lucuma Ice Cream (V)
- 6 oz CASHEWS, RAW
- 1 cup COCONUT WATER
- 1/2 cup LUCUMA POWDER
- 1/4 cup YACON SYRUP
- 1/2 tsp STEVIA POWDER, RAW
- 1/2 tsp VANILLA EXTRACT, ALCOHOL FREE
- Place all ingredients in a blender.
- Blend until cashews are completely broke down and mixture is thick and smooth. About 1
- Either refrigerate for 2 hours, churn in an ice cream maker or place directly in freezer and freeze overnight or until firm.
