Holiday Sweet Potato Stacks

3 potato slices per stack.
Ingredients
- 1 lbs sweet potatoes, inch slices
- 1 tbsp. extra virgin olive oil, 100% first cold press, unrefined
- 1-2 tbsp. cinnamon, ground
- 1-1/2 tbsp. raw maple syrup
- 1/2 tbsp. distilled water
- 2 cups fresh cranberries
- 1 cup dry roasted walnuts
Instructions
- Slice sweet potatoes into 1 inch slices, coat with EVO and sprinkle both sides with ground cinnamon.
- Spread evenly on cookie sheet and bake in preheated 400° oven until tender. About 20 minutes.
- While potatoes bake, place fresh cranberries and dry roasted walnuts in a sauté pan.
- Drizzle with raw maple syrup and water.
- Sauté over medium heat until cranberries are on the verge of bursting and syrup bubbles. About 2-3 minutes.
- Immediately remove from heat.
- Layer sweet potato slices with cranberry and walnut mixture, then drizzle entire stack with 1 tbsp. sauce per serving.
