1 pizza per serving
Ingredients
- 3 mini GF white corn tortillas, organic
- 3 tbsp goat cheese, organic
- 2 cups dino kale, organic
- 1 cup strawberries, sliced thin, organic
- 1/2 cup pineapple, sliced thin, 1inch sq
- 1/2 tbsp extra virgin olive oil 100% FCP, unrefined
- 1 tsp truffle oil
- 2 dashes sea salt
Instructions
- Sauté kale with dash of sea salt and EVO until tender.
- Spread evenly 1/2 tbsp goat cheese across each mini tortilla.
- Arrange kale, strawberries and pineapple and drops of remaining goat cheese. (1/2 tbsp per pizza)
- Drizzle with truffle oil and a light sprinkle of sea salt.
- Place under broiler until tortilla is browned and starts to crisp at edges.
