Fruit & Veggie Pizza (VG) June 15, 2016 By Jump to recipe Fruit & Veggie Pizza June 15, 2016 by EIR Category Recipes Fruit & Veggie Pizza Persons 3 Serving Size 1 pizza per serving Ingredients 3 mini GF white corn tortillas, organic 3 tbsp goat cheese, organic 2 cups dino kale, organic 1 cup strawberries, sliced thin, organic 1/2 cup pineapple, sliced thin, 1inch sq 1/2 tbsp extra virgin olive oil 100% FCP, unrefined 1 tsp truffle oil 2 dashes sea salt Instructions Sauté kale with dash of sea salt and EVO until tender. Spread evenly 1/2 tbsp goat cheese across each mini tortilla. Arrange kale, strawberries and pineapple and drops of remaining goat cheese. (1/2 tbsp per pizza) Drizzle with truffle oil and a light sprinkle of sea salt. Place under broiler until tortilla is browned and starts to crisp at edges.
