Cauliflower & Cheese Croquettes
- 1 head CAULIFLOWER, RAW MEDIUM
- 1/4 cup PARMESAN & RAMANO CHEESE, GRATED
- 1 large EGG, BEATEN, ORGANIC
- 2 cloves GARLIC, MINCED
- 1 tbsp PARSELY, FRESH, MINCED
- 1/4 cup ALL PURPOSE BAKING FLOUR, GLUTEN FREE
- 1/4 tsp SEA SALT
- Steam and rice cauliflower.
- Mix flour and salt in separate bowl.
- In a new bowl mix cauliflower, slightly beaten egg, minced garlic, parsley and cheese.
- Take handful of mixture and form ball in hand, then pat to flatten. Should fit in palm of hand.
- Coat with gluten free flour mixture.
- Brown on both sides in lightly oiled non-stick pan on medium high heat.
- Makes 5 -6 croquettes
