Bok Choy & Wild Rice Soup October 6, 2016 By Jump to recipe Bok Choy & Wild Rice Soup October 6, 2016 by EIR Category Recipes Bok Choy & Wild Rice Soup Persons 4 Serving Size 1-1/2 cups per serving Ingredients 1 cup organic wild rice 1/2 cup organic brown rice 3 cups bok choy, chopped 2 cups beef broth, low sodium 2 cups distilled water 1 cup maitake mushrooms 1 tbsp. fresh thyme 1 cup shallots, chopped 1/4 tsp black pepper, ground 1/4 cup red wine 1 tsp extra virgin olive oil, first cold pressed, unrefined Instructions Prepare rice according to package directions and set aside. In a large stock pot, sauté bok choy, mushrooms and shallots on medium high heat with 1 tsp EVO until mushrooms and bok choy are tender and shallots are slightly caramelized. Add a dash of sea salt, black pepper and thyme and continue sauté about 1 minutes. Add red wine and let bubble for 3 minutes until liquid reduces to half. Add beef broth and let simmer for 10-15 minutes and remove from heat. Spoon into individual serving bowls and add 1/2 cup of rice to each portion right before serving.
