Bok Choy & Wild Rice Soup

Bok Choy & Wild Rice Soup

Ingredients

  • 1 cup organic wild rice
  • 1/2 cup organic brown rice
  • 3 cups bok choy, chopped
  • 2 cups beef broth, low sodium
  • 2 cups distilled water
  • 1 cup maitake mushrooms
  • 1 tbsp. fresh thyme
  • 1 cup shallots, chopped
  • 1/4 tsp black pepper, ground
  • 1/4 cup red wine
  • 1 tsp extra virgin olive oil, first cold pressed, unrefined

Instructions

  1. Prepare rice according to package directions and set aside.
  2. In a large stock pot, sauté bok choy, mushrooms and shallots on medium high heat with 1 tsp EVO until mushrooms and bok choy are tender and shallots are slightly caramelized.
  3. Add a dash of sea salt, black pepper and thyme and continue sauté about 1 minutes.
  4. Add red wine and let bubble for 3 minutes until liquid reduces to half.
  5. Add beef broth and let simmer for 10-15 minutes and remove from heat.
  6. Spoon into individual serving bowls and add 1/2 cup of rice to each portion right before serving.
