Bok Choy & Wild Rice Soup

Ingredients
- 1 cup organic wild rice
- 1/2 cup organic brown rice
- 3 cups bok choy, chopped
- 2 cups beef broth, low sodium
- 2 cups distilled water
- 1 cup maitake mushrooms
- 1 tbsp. fresh thyme
- 1 cup shallots, chopped
- 1/4 tsp black pepper, ground
- 1/4 cup red wine
- 1 tsp extra virgin olive oil, first cold pressed, unrefined
Instructions
- Prepare rice according to package directions and set aside.
- In a large stock pot, sauté bok choy, mushrooms and shallots on medium high heat with 1 tsp EVO until mushrooms and bok choy are tender and shallots are slightly caramelized.
- Add a dash of sea salt, black pepper and thyme and continue sauté about 1 minutes.
- Add red wine and let bubble for 3 minutes until liquid reduces to half.
- Add beef broth and let simmer for 10-15 minutes and remove from heat.
- Spoon into individual serving bowls and add 1/2 cup of rice to each portion right before serving.
