Beef and Mushroom Stew

Ingredients

  • 1 lb BEEF, TOP SIRLOIN STEAK, BONELESS, RAW
  • 3 cloves GARLIC, RAW
  • 1 cup ONION, RAW, CHOPPED
  • 1 tsp OLIVE OIL, EXTRA VIRGIN, 100% first cold pressed unrefined
  • 2 tbsp GLUTEN FREE ALL PURPOSE FLOUR
  • 1 tsp BLACK PEPPER, GROUND
  • 3 cup MUSHROOM, RAW
  • 1 1/2 cup WHITE WINE, DRY
  • 1/2 cup WATER
  • 1/4 cup ORANGE JUICE, ORGANIC, NO ADDED SUGAR
  • 2 tsp BASIL, DRIED, LEAVES
  • 1 tsp THYME, DRIED
  • 1.5 cup TOMATOES, DICED
  • 1 cup CARROT, RAW, SLICED

Instructions

  1. Cut beef into cubes.
  2. Chop garlic and add oil to a skillet.
  3. Add beef , garlic and onion and sauté 5 minutes.
  4. Combine GF flour and pepper and sprinkle over beef.
  5. Cook 1 minute, stirring constantly.
  6. Add mushrooms and next 7 ingredients.
  7. Bring to a boil, then reduce heat and simmer uncovered.
  8. Stir occasionally and simmer 40 minutes or until beef is tender.
